Our American Wagyu comes from various Wagyu ranches across the United States. The location we use varies by time of year, the demand for a specific cut, and the supply we have in stock. These suppliers are the same suppliers we use when providing product to our restaurants and have been vetted out by our industry experts. Quality is of utmost importance. The same applies for our Japanese Wagyu, except that the Japanese Wagyu comes from ranches located in Japan. Depending on the time of year, the Japanese Wagyu is imported via air freight or ship freight. We work with many ranches from the various prefectures in Japan, including Miyazaki, Kagoshima, and Hyogo.
